(A side note: Cà Phê Sữa Đá is made with sweetened condensed milk because fresh milk or cream couldn’t easily be found in 19th century Vietnam.) Cà Phê Sữa Đá does not fit in the world of instant gratification. A correctly prepared Cà Phê Sữa Đá is a delicacy you will be delighted to wait for whether you make it yourself or order it at a cafe. It takes about 15 minutes or more to make a proper Cà Phê Sữa Đá using a unique Vietnamese style metal pour-over drip filter called a Phin. You will pour boiling water over your coffee grounds in the Phin 3 to 4 times to achieve about 3 oz of cà phê.
